Turkey Involtini with Pecorino Toscano and Spinach
Ingredients for 4 people
  • 240 g Pecorino Toscano, thinly sliced
  • 8 slices turkey breast (400 g)
  • 300 g boiled spinach, finely chopped
  • 100 g minced turkey breast
  • 50 g chopped walnuts
  • 2 glasses Tuscan white wine
  • 1 egg
  • salt and pepper to taste
Mix the spinach, minced turkey, walnuts, egg, salt and pepper.
Leave to stand for about 10 minutes.

Beat the turkey slices and coat them with the mixture.
Add sliced cheese (Pecorino Toscano).

Roll up the slices and tie with kitchen string.

Place in a pan oiled with extra virgin olive oil, and brown in the oven for about 10 minutes.

Turn them and add the wine.

Once the wine has evaporated, the rolls are cooked.

Cut into slices, remove string and serve.

For extra flavour, add the cooking sauce (strained).
