Farro Cake with Montasio Sauce and Radicchio
Ingredients for 4 people
  • 400 g of farro (Italian spelt), cooked
  • 2 eggs
  • 2 tablespoons of cream 18% (half&half)
  • 60 g of Grana Padano, grated
  • 1 or 2 radicchio bunch
  • 200 ml of cheese sauce made with Montasio
  • extra virgin olive oil
  • salt and pepper to taste
In a large bowl, mix the cooked farro, the eggs, the cream, the grated Grana Padano, a pinch of salt and pepper.

Divide the mixture in 4 moulds, previously buttered and lined with waxed paper. Bake in a preheated oven at 200ºC for 20 minutes. Set aside.
Slice the radicchio lenghtwise; brush with extra virgin olive oil and press on the grill.

To serve, heat the cheese sauce and line a plate with it. Unmould one by one the farro cakes and turn them onto the sauce. Decorate with the radicchio.
