Romanian artichokes

Ingrédients (6 servings):
  • 12 small artichokes
  • 1 bunch wild mint
  • 3 cloves garlic
  • 1 glass olive oil
  • 1/2 l water
  • salt and pepper
Préparation :

Trim the artichokes by removing outside leaves.

Insert chopped wild mint leaves and mashed garlic cloves between the artichoke leaves.

Place artichokes close together in a casserole-type pan, sprinkle with oil and water, season.

Cover and let simmer for 1 hour and 30 minutes over medium heat.

To serve, remove artichokes, reduce remaining mixture by half and pour over vegetables. Serve hot or cold.

When serving hot, add garlic-rubbed oil-fried croutons.
