Multicoloured Salad with Taleggio
Ingredients for 4 people
  • 100 g Taleggio
  • 100 g carrots
  • 100 g red peppers
  • 100 g cucumbers
  • 100 g celeriac
  • mild mustard
  • extra virgin olive oil
  • lemon
  • salt
  • pepper
Cut the vegetables and cheese (Taleggio) into thin strips. To keep the vegetables fresh and crunchy, soak them in a bowl with iced water.

Drain them and add the Taleggio cheese.

Prepare a sauce by mixing 2/3 extra virgin olive oil, 1/3 lemon, salt, pepper and a teaspoonful of mustard.

Mix the vegetables with the sauce and serve with croutons.
