Almond cake (torta di mandorle)


  • 200 g almond powder
  • 200 g potato starch
  • 500 g powdered sugar
  • 12 eggs (separate yolks and beat whites into stiff peaks)
  • 1 shot glass of liqueur
  • Zest of one unprocessed lemon
  • 1 packet yeast
Work the sugar into the egg yolks, add the starch, almond powder, liqueur, lemon zest, stiff egg whites and, lastly, the yeast. Pour the mixture into a mould and bake at moderate heat.
