Fried Cheese
Ingredients for 4 people
  • 4 thick slices of mixed young cheeses (Montasio, Asiago, etc.)
  • 40 g of butter
  • 1 tablespoon of extra virgin olive oil
  • 2 large onions, thinly sliced

Cut cheeses in bite-sizes pieces.
In a large pan, melt butter in olive oil. When very hot, add the cheese pieces and the onion rings.

Sauté until a thin crust forms all over the cheese.
Serve with Mostarda di Cremona (Italian fruit mustard available at Italian specialty food stores) or fruit puré

-Montasio, fromage à pâte mi-dure (Vénétie, Frioul-Vénétie Julienne)
-Asiago, fromage à pâte mi-dure (Vénétie, Trentin Haut-Adige)
-Taleggio, fromage à pâte molle (Piémont)
